We cook at the lowest possible temperature to preserve nutrients while ensuring food safety. Small changes in the cooking process - such as slightly more steam - can influence the final shade of the food.
We could bake at higher temperatures for a more uniform colour, but this would compromise nutritional quality, which is something we refuse to do.
